Mashed Pumpkin Soup

  1. Clean the pumpkin: wash it, peel the rind, scoop out the seeds and cut into 2 cm pieces.
  2. Peel and chop onions and garlic: cut the onions into large strips and chop each garlic clove into two.
  3. Peel, wash and slice the carrot.
  4. Put all vegetables into a pot, pour with boiling water (just enough to submerge all vegetables).
  5. Heat to boil and then add a cube of broth.
  6. Boil until vegetables are completely soft.
  7. If the water evaporates earlier, add more.
  8. When the vegetables are done, blend them using a blender or a mixer.
  9. Serve with half a spoon of yoghurt sour cream.
